1 Tbsp + 1 tsp raw sugar
2-1/4 cups water
1 cup cucumbers, peeled and sliced
1/4 cup mint leaves
1 cup freshly-squeezed lemon juice
Make a simple syrup: In a small pot combine sugar and 1/4 cup water. Bring to a boil until sugar is dissolved. Remove from heat and let cool slightly.
In a blender combine cucumbers, mint leaves, lemon juice, and simple syrup. Puree until smooth.
Strain using a strainer or cheesecloth.
Pour lemonade into a pitcher. Add remaining 2 cups water. Mix well.
Keep chilled until ready to serve.
