Crockpot Rotisserie Chicken

Ingredients

  • 4 lb. whole chicken, skin on

  • 1 Tbsp olive oil

  • 1 Tbsp brown sugar

  • 1 Tbsp smoked paprika

  • 1 tsp chili powder

  • 1 tsp dried thyme

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 1/2 tsp sea salt

  • 1/2 tsp black pepper

  • Foil


Directions

  1. Rinse chicken with water and pat dry, both inside and out.

  2. Rub olive oil on the outside of the chicken.

  3. Combine remaining ingredients in a small mixing bowl, rub all over outside of the chicken. Sprinkle a little bit inside the cavity as well.

  4. Add 4 balls of aluminum foil to the bottom of a large slow cooker - this creates a "rack" for the chicken to cook on.

  5. Place the chicken on top of the foil balls. Cover and cook on HIGH for 4-5 hours - internal temperature must be 165 degrees using an instant read or meat thermometer.
