Cottage Cheese Pancakes

Ingredients

  • 1 cup full-fat (4%) cottage cheese

  • 3 eggs

  • 1 tsp vanilla extract

  • 1/2 tsp lemon or orange zest, optional (see notes)

  • 1/3 cup whole wheat flour


Directions

  1. Pulse cottage cheese, eggs and vanilla in a blender or food processor until mixture is smooth.

  2. Pour mixture into a bowl and add flour and lemon/orange zest (if using). Stir until well combined.

  3. Heat a non-stick skillet over medium heat. If desired, use a small amount of olive or coconut oil to grease pan.

  4. Add 1/3 cup batter to skillet and cook for 2-3 minutes per side. Repeat for remaining pancakes.
