1 cup full-fat (4%) cottage cheese
3 eggs
1 tsp vanilla extract
1/2 tsp lemon or orange zest, optional (see notes)
1/3 cup whole wheat flour
Pulse cottage cheese, eggs and vanilla in a blender or food processor until mixture is smooth.
Pour mixture into a bowl and add flour and lemon/orange zest (if using). Stir until well combined.
Heat a non-stick skillet over medium heat. If desired, use a small amount of olive or coconut oil to grease pan.
Add 1/3 cup batter to skillet and cook for 2-3 minutes per side. Repeat for remaining pancakes.
