Chopped Chicken Breakfast Hash


MAKES: serving

Ingredients

  • 1 Tbsp olive oil

  • 3 oz chicken

  • 1/4 of an onion, diced

  • 1/2 cup potato, diced

  • Salt and pepper to taste

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1 tsp chili powder

  • 1/2 red bell pepper, diced

  • 2 Tbsp sliced scallion

  • 1 egg


Directions

  1. Heat skillet or saute pan. Add 1/2 Tbsp olive oil to pan. Add chicken to pan, as chicken cooks begin chopping with spatula.

  2. Once chicken is almost done cooking add onions and potatoes.

  3. Season with salt, pepper, onion powder, garlic powder, paprika and chili powder.

  4. Cook for 5 minutes. Add bell peppers and scallions.

  5. Cook until done.

  6. Remove cooked hash from pan and place onto plate. Put pan back on heat.

  7. Add 1/2 Tbsp olive oil and cook 1 egg to your liking. Add cooked egg on top of hash. Enjoy.
