1/2 cup quinoa, uncooked, rinsed
1/2 cup unsweetened almond milk
1/2 cup water (more if needed)
1 Tbsp cocoa powder
1 Tbsp honey (use maple syrup for vegan substitute)
1 tsp vanilla extract
1 cup sliced almonds
3 Tbsp chia or hemp seeds
Heat a small saucepan over medium heat. Rinse 1/2 cup quinoa and add to pan. Let toast for a couple minutes, stirring frequently.
Add unsweetened almond milk, water, cocoa powder, honey and vanilla extract. Mix.
Bring to a boil. Then, reduce heat to low. Cover and let cook 10-15 minutes, or until quinoa is cooked to your liking.
Divide into 3 equal servings.
Divide the almonds and seeds among the 3 servings.
