1 cup cilantro, packed
2 Tbsp walnuts
1 Tbsp lemon juice
1 garlic clove, whole
1 Tbsp olive oil
Sea salt to taste
1 cup tomatoes
3 cups mushrooms
1/4 cup onions
3/4 lb chicken breast, cooked
1 cup whole wheat pasta, cooked (measure after cooking)
Pesto: In a blender or food processor, blend cilantro, walnuts, lemon juice, garlic, olive oil, and salt until well combined. Set aside.
Sauté vegetables to desired tenderness. Add 2 Tbsp pesto. Gently mix to coat vegetables.
In a bowl, combine cooked chicken, pasta, and vegetables with pesto sauce. Mix well. Serve immediately.
