Chicken Pesto Pasta

Ingredients

  • 1 cup cilantro, packed

  • 2 Tbsp walnuts

  • 1 Tbsp lemon juice

  • 1 garlic clove, whole

  • 1 Tbsp olive oil

  • Sea salt to taste

  • 1 cup tomatoes

  • 3 cups mushrooms

  • 1/4 cup onions

  • 3/4 lb chicken breast, cooked

  • 1 cup whole wheat pasta, cooked (measure after cooking)


Directions

  1. Pesto: In a blender or food processor, blend cilantro, walnuts, lemon juice, garlic, olive oil, and salt until well combined. Set aside.

  2. Sauté vegetables to desired tenderness. Add 2 Tbsp pesto. Gently mix to coat vegetables.

  3. In a bowl, combine cooked chicken, pasta, and vegetables with pesto sauce. Mix well. Serve immediately.
