2 lbs chicken breast, cut into bite-sized pieces
2 Tbsp olive oil
1 lemon
1 garlic clove, finely diced
2 Tbsp honey
1 Tbsp ginger, finely diced
1/3 cup soy sauce
8 skewers
Sea salt
In a bowl, combine chicken and olive oil. Toss to coat.
Squeeze lemon over chicken. Add garlic. Stir to combine. Cover and place in the refrigerator to marinate for at least 30 minutes.
In a small pan over low heat, add honey, soy sauce, and ginger.
Thread chicken onto skewers (if using wooden skewers, make sure you pre-soak them to prevent burning).
Transfer skewers to a hot grill (or grill pan) and cook for 4 to 5 minutes. Flip and lightly brush chicken with the sauce. Cook until done.
Transfer to a serving platter and pour remaining sauce over skewers. Serve immediately.
