Chicken and Broccoli

Ingredients

  • 1 tsp olive oil

  • 1-1/2 lbs chicken, cut into strips or diced

  • 1 cup onions, diced

  • 1 garlic clove, minced

  • 7 cups broccoli

  • 2 cups cooked brown rice (measure after cooking)

Sauce:

  • 1/2 cup soy or Tamari sauce

  • 1 Tbsp cornstarch

  • 1 Tbsp minced garlic

  • 2 tsp fresh ginger

  • 1 Tbsp + 1 tsp brown sugar


Directions

  1. In a medium bowl, mix together sauce ingredients. Set aside.

  2. Sauté chicken in 1 tsp oil until chicken is cooked through. Transfer to a plate and set aside.

  3. Add onions and garlic to pan. Stir for 2 minutes. Add broccoli. Stir, then cover.

  4. Steam, stirring often, for about 5 minutes or until broccoli is tender.

  5. Return chicken to pan with broccoli. Stir.

  6. Add sauce to pan. Stir and bring to a boil. Keep stirring until sauce has thickened.

  7. Divide into 4 equal servings.

  8. Serve each over 1/2 cup cooked brown rice.
