1 tsp olive oil
1-1/2 lbs chicken, cut into strips or diced
1 cup onions, diced
1 garlic clove, minced
7 cups broccoli
2 cups cooked brown rice (measure after cooking)
1/2 cup soy or Tamari sauce
1 Tbsp cornstarch
1 Tbsp minced garlic
2 tsp fresh ginger
1 Tbsp + 1 tsp brown sugar
In a medium bowl, mix together sauce ingredients. Set aside.
Sauté chicken in 1 tsp oil until chicken is cooked through. Transfer to a plate and set aside.
Add onions and garlic to pan. Stir for 2 minutes. Add broccoli. Stir, then cover.
Steam, stirring often, for about 5 minutes or until broccoli is tender.
Return chicken to pan with broccoli. Stir.
Add sauce to pan. Stir and bring to a boil. Keep stirring until sauce has thickened.
Divide into 4 equal servings.
Serve each over 1/2 cup cooked brown rice.
