1 banana, sliced
2 cups Greek yogurt
2 cups unsweetened almond milk
1 Tbsp vanilla extract
12 Tbsp (3/4 cup) chia seeds
1 cup blueberries (strawberries, mangoes, peaches, etc. work too)
1 Tbsp honey
Unsweetened coconut flakes, 3 Tbsp per serving
Mash banana in medium to large size bowl, mix with Greek yogurt until smooth.
Pour in unsweetened almond milk, vanilla extract, chia seeds, blueberries (if using other fruit make sure it's chopped), and honey. Mix well.
Place in air tight container and place in refrigerator. Let set for 4 hours.
Once set, evenly distribute chia pudding in 4 containers.
Sprinkle 3 Tbsp of unsweetened coconut flakes on top of 1 chia pudding serving, enjoy.
