1 12-oz bag frozen cherries
1 13.66-oz can full-fat coconut milk
1 tsp vanilla extract
3 Tbsp honey
1/4 cup mini dark chocolate chips
Set aside a quarter bag of cherries. Dice remaining cherries.
Puree whole cherries in a blender or food processor.
Add coconut milk, vanilla and honey to blender with pureed cherries. Blend on medium speed 1 minute.
Stir in remaining chopped cherries and chocolate chips (do not blend).
Pour mixture into a loaf pan and freeze for at least 3 hours.
