Cherry Chocolate Chip Ice Cream

Ingredients

  • 1 12-oz bag frozen cherries

  • 1 13.66-oz can full-fat coconut milk

  • 1 tsp vanilla extract

  • 3 Tbsp honey

  • 1/4 cup mini dark chocolate chips


Directions

  1. Set aside a quarter bag of cherries. Dice remaining cherries.

  2. Puree whole cherries in a blender or food processor.

  3. Add coconut milk, vanilla and honey to blender with pureed cherries. Blend on medium speed 1 minute.

  4. Stir in remaining chopped cherries and chocolate chips (do not blend).

  5. Pour mixture into a loaf pan and freeze for at least 3 hours.
