1 cup cooked broccoli, chopped into small pieces
1/2 cup cooked brown rice
1 tsp butter
1 tsp wheat flour
1/4 cup whole milk
1 oz shredded cheddar cheese
dash of cayenne pepper (optional)
dash of black pepper
salt, if needed
1 egg, cooked to your liking
Steam broccoli, when done chop into very small pieces and set aside.
Cook rice according to package and set 1/2 cup cooked aside (or you can use leftover rice).
In a small sauce pan, on medium heat, melt 1 tsp butter. Once butter has melted, add 1 tsp flour. Whisk together to make a roux. Slowly add milk to the roux (butter and flour mixture), while whisking the entire time. Continue to mix the milk mixture on medium heat until sauce starts to thicken. Careful not to burn the mixture!
Remove from heat and add cheddar cheese, whisking until smooth. Add seasonings, broccoli, and rice. Stir.
Cook 1 egg to your liking, add cooked egg on top of broccoli mixture and serve. Enjoy!
