Carrot Pumpkins & Eerie Avocado Dip

Ingredients

  • 1 lb carrots

  • 1 cup plain Greek yogurt

  • 1 Tbsp dill

  • 1 Tbsp garlic powder

  • 1 Tbsp onion powder

  • 1/2 tsp dried basil

  • 1/2 tsp black pepper

  • 2 Tbsp parsley, chopped

  • 2 Tbsp lime juice

  • 1 Tbsp green onions, chopped

  • 2 avocados


Directions

  1. Pumpkins

  2. Cut two slits down the length of carrot (the depth will determine height of pumpkin stem).

  3. Cut in from the sides of the carrot to the first cut you made. Remove triangular section remaining. Repeat on the other side.

  4. Round off the sides of the carrot if you would like, then slice carrot as you normally would.

  5. Dip

  6. In a medium bowl, combine yogurt, dill leaf, garlic and onion powder, dried basil, pepper, parsley, onions and lime juice. Mix well.

  7. Cut avocados into small cubes. Transfer to a blender / food processor. Add yogurt mixture. Blend until smooth, then pour into a bowl.

  8. Chill several hours before serving.
