1 cup of leftover or fresh cooked spaghetti squash
1 egg
Sea salt, a pinch
Pepper, a pinch
Preheat your cooking device of choice for 425 degrees F.
Form 1 cup of spaghetti squash into a "nest" on parchment paper, baking sheet, cast iron, or air fryer basket/sheet.
Carefully crack 1 egg into the "nest".
Season the egg with salt and pepper.
Bake for 15 minutes or until egg is cooked to your liking. Remove from heat and carefully use a spatula to remove the "nest".
Serve with a 2nd protein choice, 1 carb serving, and a healthy fat for a complete meal! Enjoy!
