Breakfast "Nests"


MAKES: serving

Ingredients

  • 1 cup of leftover or fresh cooked spaghetti squash

  • 1 egg

  • Sea salt, a pinch

  • Pepper, a pinch


Directions

  1. Preheat your cooking device of choice for 425 degrees F.

  2. Form 1 cup of spaghetti squash into a "nest" on parchment paper, baking sheet, cast iron, or air fryer basket/sheet.

  3. Carefully crack 1 egg into the "nest".

  4. Season the egg with salt and pepper.

  5. Bake for 15 minutes or until egg is cooked to your liking. Remove from heat and carefully use a spatula to remove the "nest".

  6. Serve with a 2nd protein choice, 1 carb serving, and a healthy fat for a complete meal! Enjoy!
