Blueberry Lemon Breakfast Bowl

Ingredients

  • 2/3 cup quinoa

  • 1-1/3 cups whole milk

  • 1 Tbsp pure maple syrup

  • 1/2 lemon, zested

  • 3 Tbsp hemp seeds or 2 oz. nuts, chopped

  • 1 cups blueberries

  • 1 pinch sea salt


Directions

  1. Rinse quinoa in a fine mesh strainer (so the quinoa does not go through the holes).

  2. Heat milk in a saucepan over medium heat for about 2 to 3 minutes. Stir in the quinoa and sea salt and simmer over medium-low heat until much of the liquid has been absorbed, about 20 minutes.

  3. Remove from heat and stir in maple syrup, lemon zest and hemp seeds. Gently add blueberries and combine into mixture.

  4. Divide into 3 servings and enjoy!
