Beef Stroganoff

Ingredients

  • 1-1/2 lbs top sirloin steak, about 1/2-inch thick

  • 4 cups mushrooms, sliced

  • 2 cups onions, thinly sliced

  • 1 garlic clove, finely chopped

  • 1 Tbsp olive oil

  • 1-1/2 cups beef broth

  • 1 tsp sea salt

  • 1/4 cup flour

  • 1 cup plain Greek yogurt

  • 3 cups egg noodles, cooked


Directions

  1. Cut beef into small strips.

  2. In a 10-inch skillet over medium heat, cook mushrooms, onions, and garlic in oil, stirring occasionally. Cook until onions are tender. Remove from skillet.

  3. Cook beef in the same skillet until brown. Stir in 1 cup broth and sea salt. Bring to a boil, then reduce heat, cover and simmer 15 minutes.

  4. Add flour to a small bowl. Stir remaining 1/2 cup broth into flour, then stir into beef mixture.

  5. Add onion mixture. Bring to a boil, stirring constantly, 1 minute.

  6. Stir in Greek yogurt. Cook until hot, but do not boil.

  7. Separate into 6 equal servings and serve each over 1/2 cup egg noodles.
