1 Tbsp olive oil
2 cups tomatoes, chopped
1 cup onions, chopped
1 cup zucchini, chopped
1 Tbsp fresh basil, chopped
2 cloves garlic, minced
1/2 tsp crushed red pepper flakes
12 oz ground beef
Sea salt and pepper, to taste
1 cup cooked brown rice
In a bowl, combine 1 Tbsp olive oil, tomatoes, onions, zucchini, basil, garlic and red pepper flakes. Set aside.
Heat a large skillet over medium heat. Add ground beef. Stir and cook until cooked through, about 5 minutes (drain any excess fat).
Stir in vegetable mixture and heat through, about 3-5 minutes.
Divide into 2 servings and pour each serving over ½ cup brown rice.
