Beef and Veggie Skillet

Ingredients

  • 1 Tbsp olive oil

  • 2 cups tomatoes, chopped

  • 1 cup onions, chopped

  • 1 cup zucchini, chopped

  • 1 Tbsp fresh basil, chopped

  • 2 cloves garlic, minced

  • 1/2 tsp crushed red pepper flakes

  • 12 oz ground beef

  • Sea salt and pepper, to taste

  • 1 cup cooked brown rice


Directions

  1. In a bowl, combine 1 Tbsp olive oil, tomatoes, onions, zucchini, basil, garlic and red pepper flakes. Set aside.

  2. Heat a large skillet over medium heat. Add ground beef. Stir and cook until cooked through, about 5 minutes (drain any excess fat).

  3. Stir in vegetable mixture and heat through, about 3-5 minutes.

  4. Divide into 2 servings and pour each serving over ½ cup brown rice.
