Beef & Broccoli Salad with Ginger Vinaigrette

Ingredients

  • 1 cup broccoli florets

  • 12 oz. beef sirloin steak, thinly slices across the grain

  • 2-1/2 cups leafy greens

  • 1/2 cup red bell pepper

Ginger Vinaigrette:

  • 1 green onion, chopped

  • 1 clove garlic, minced

  • 1 tsp sesame oil

  • 1/2 Tbsp soy sauce

  • 1 Tbsp rice vinegar

  • 1/2 Tbsp fresh ginger, chopped

  • 1/4 tsp honey

  • 1 tsp avocado oil


Directions

  1. In a wok or large skillet, heat 1 Tbsp of the ginger vinaigrette over medium-high heat. Add broccoli and cook for 3 minutes. Then add beef and cook for 2-3 minutes or until desired doneness. Remove from heat.

  2. In a large bowl, combine leafy greens, red bell pepper, broccoli, beef. Drizzle remaining dressing and toss to combine.
