Ingredients

  • 1/4 cup coconut oil + extra to grease pan (measure solid, then melt to use in recipe)

  • 1 cup mashed ripe bananas

  • 1/2 tsp baking soda

  • 3 Tbsp brown sugar

  • 1 large egg

  • 1/2 cup whole wheat flour

  • 1/2 cup oatmeal

  • 1 tsp vanilla

  • 1/2 tsp sea salt


Directions

  1. Preheat over to 350°. Grease an 8 x 8-inch baking pan with coconut oil.

  2. In a large bowl, mash bananas until only small chunks remain. Stir in baking soda.

  3. Add remaining ingredients. Mix well, then spread in prepared pan.

  4. Bake 30 minutes, until edges are brown and center is firm.

  5. Cool completely.

  6. Cut into 6 bars.
