Ingredients

  • Coconut oil (to grease pan)

  • 1 cup oats (old fashioned, steel cut, or rolled)

  • 3 Tbsp brown sugar

  • 1 tsp baking powder

  • 2 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/2 tsp sea salt

  • 1/2 cup whole milk

  • 1 cup banana, mashed

  • 1 tsp vanilla

  • 1 large egg

  • 1 Tbsp unsalted butter, melted

  • 1/4 cup walnuts, chopped


Directions

  1. Preheat oven to 350°F. Lightly grease an 8-inch square baking dish or pie plate with coconut oil.

  2. In a medium bowl combine oats, brown sugar, baking powder, cinnamon, nutmeg, and salt. Mix.

  3. In a large bowl whisk together milk, banana, egg, and vanilla. Slowly pour in melted butter, whisking constantly.

  4. Combine oats mixture and wet ingredients. Mix, then gently fold in walnuts.

  5. Transfer to baking dish. Bake for 25 to 35 minutes or until a toothpick comes out clean when inserted into the center.

  6. Cut into 6 equal servings.
