Ingredients

  • 1 1/2 lbs 97% lean ground beef

  • 2 Tbsp olive oil

  • 1 cup onion, diced

  • 2 cups yellow pepper, diced

  • 1 lb fresh spinach or 10 oz frozen spinach

  • 1 cup butternut squash, cubed & roasted

  • 2 cups cooked brown rice

  • Garlic, fresh or dried, to taste

  • Sea salt and pepper, to taste


Directions

  1. If using frozen spinach, allow spinach to thaw overnight in the refrigerator in a strainer or colander with a towel underneath. When thawed, take spinach in hand and squeeze out all excess water. For faster thawing, place package in the microwave and warm up in small increments making sure not to over cook the spinach. When thawed, set aside. If you are using fresh spinach, skip to step 2.

  2. Cook rice if not already done by following directions on package.

  3. Cook the ground beef. Once fully cooked, drain excess fat. Season and stir. (Tip: When seasoning the ground beef, add some water to help evenly distribute the seasonings. Allow the water to cook off before removing cooked ground beef from the pan.) Remove the cooked meat from the pam and set aside.

  4. In the same pan over medium heat, add olive oil. Add the onions and peppers. Cook until tender.

  5. Add spinach and cooked butternut squash. Season and stir to combine. Once spinach has heated through, turn heat off.

  6. In a large bowl, combine ground feed, rice, and vegetable mixture. Stir gently to combine
