Almond Crusted Cod

Ingredients

  • 1 tsp honey

  • 1 Tbsp tamari or soy sauce

  • 1/2 tsp garlic, minced

  • 1 Tbsp almonds, finely chopped

  • 1 Tbsp sesame seeds

  • 1 tsp olive oil

  • 1 6-oz cod fillet


Directions

  1. In a small bowl, combine honey, tamari sauce and garlic. Mix well. Set aside.

  2. In a small bowl, mix almonds and sesame seeds. Set aside.

  3. Heat olive oil over medium heat in a large pan.

  4. Brush cod with honey-tamari mixture, then cover the top in almond / sesame seed mixture.

  5. Place cod in pan, crust down. Cook for about 5 minutes on each side, or until cod is opaque in color and begins to flake.

  6. Transfer to a serving plate and top with remaining tamari / soy sauce.
