A New Twist on Broccoli Salad

Ingredients

  • 3/4 cups apple, chopped into bite-sized pieces

  • 1/2 Tbsp lemon juice

  • 6 cups fresh broccoli, cut into bite-sized pieces

  • 1/2 cup fresh blueberries

  • 2 Tbsp red onion, finely chopped

  • 2 Tbsp dried cranberries

  • 1/4 cup sunflower seeds

Dressing

  • 1/2 cup plain Greek yogurt

  • 1 Tbsp honey

  • 1/2 Tbsp lemon juice

  • 1/2 Tbsp water

  • 1/2 Tbsp poppy seeds


Directions

  1. In a small bowl, toss apple with 1/2 Tbsp lemon juice. Transfer to a large bowl.

  2. Add broccoli, blueberries, red onion, cranberries, and sunflower seeds. Mix gently.

  3. In a small bowl, whisk together all dressing ingredients.

  4. Pour dressing over salad. Toss gently to coat.

  5. Serve immediately or refrigerate for 2 to 3 days depending on the freshness of your ingredients.
