3/4 cups apple, chopped into bite-sized pieces
1/2 Tbsp lemon juice
6 cups fresh broccoli, cut into bite-sized pieces
1/2 cup fresh blueberries
2 Tbsp red onion, finely chopped
2 Tbsp dried cranberries
1/4 cup sunflower seeds
1/2 cup plain Greek yogurt
1 Tbsp honey
1/2 Tbsp lemon juice
1/2 Tbsp water
1/2 Tbsp poppy seeds
In a small bowl, toss apple with 1/2 Tbsp lemon juice. Transfer to a large bowl.
Add broccoli, blueberries, red onion, cranberries, and sunflower seeds. Mix gently.
In a small bowl, whisk together all dressing ingredients.
Pour dressing over salad. Toss gently to coat.
Serve immediately or refrigerate for 2 to 3 days depending on the freshness of your ingredients.
